=== Purifications and measurements of mass === The minimum molecular weight suggested by Mulder's analyses was roughly 9 kDa, hundreds of times larger than other molecules being studied. Hence, the chemical structure of proteins (their primary structure) was an active area of research until 1949, when Fred Sanger sequenced insulin. The (correct) theory that proteins were linear polymers of amino acids linked by peptide bonds was proposed independently and simultaneously by Franz Hofmeister and Emil Fischer at the same conference in 1902. == Current issues == There are various usages of ethanol which include an additive to gasoline, a primary ingredient for food preservation as well as alcoholic beverages and being used for transdermal drug delivery. For example, it can function as an antiseptic in topical creams to kill bacteria by denaturing proteins. Ethanol is an amphiphilic molecule meaning that it has chemical and physical properties associated with hydrophobic and hydrophilic molecules. Although, studies show that when penetrating through the biomembrane its hydrophobic abilities appear to be limited based on its preference to bind closely to the hydrophilic region of the phospholipids. There are various issues presented in regards to ethanol's ability to penetrate through the biomembrane and cause a reorganization of the phospholipids towards non-lamellar phases. The issues are: 1) how the alteration of the phospholipids' phase occurs 2) understanding the significance of ethanol's interaction with membrane proteins and membrane phospholipids 3) understanding the permeability of the biomembrane based on the tolerance and adaptation level in the presence of ethanol although this process appears to be concentration-dependent 4) determining the significance of ethanol's amphiphilic character as it relates to its ability to partition throughout the membrane by increasing the fluidity of it. However, CJNG still had strongholds in the Mexican states of Jalisco, Guanajuato, Querétaro, Hidalgo and Veracruz. The CJNG also made its presence in Ciudad Juárez with its New Juárez Cartel, though it failed to deter the hold which La Linea and the Sinaloa Cartel's Los Salazar affiliate had over the Ciudad Juárez drug trafficking market as well. On 23 June 2020, it was revealed that the CJNG had sent assassins to kill Santa Rosa de Lima leader José Antonio Yépez Ortiz, also known as El Marro, on many occasions, including at his sister's wedding earlier in the year. It was also revealed that the CJNG was struggling to gain influence in territory controlled by the Santa Rosa de Lima Cartel. Osemozotan does not metabolize to 1-(2-pyrimidinyl)-piperazine (1-PP), a common metabolite found with the azapirone class of medications that has affinity for receptors other than the 5-HT1A receptor, thus decreasing its specificity and increasing the risk of unwanted effects. Since osemozotan does not produce this metabolite, it has greater specificity toward the 5-HT1A receptor when compared to other anxiolytic medications.
=== 2009: Norovirus outbreak === On 27 February 2009, Blumenthal closed the Fat Duck temporarily after a number of customers reported feeling unwell at different times. On 6 March, it was reported that 400 people had stated they had felt unwell after eating at the restaurant. The cause was later given by the Health Protection Agency as norovirus, thought to have originated from oysters harvested from beds contaminated with sewage. The virus spread further after being contracted by staff members. The Fat Duck was criticised for its cleaning methods and its slow response, and received 529 complaints of illness. It was the largest norovirus outbreak ever documented at a restaurant. The Fat Duck reopened on 12 March 2009.
